The Advanced Diploma in Professional Cookery course will allow you to gain either your Level 1, Level 2 or Level 3 Diplomas in Professional Cookery, alongside a professional food service qualification which will allow you access to one of the largest employment sectors in the world. Many former students have gone on to work including cruise ships, and some now run their own catering businesses. Taught by industry specialists in the College’s state of the art industrial kitchen facilities, you will study the craft of creating and presenting gourmet dishes often served in the College’s Future Chefs restaurant which is open to the public. In addition, you will be given the opportunity to gain alongside Guernsey’s top chefs and restaurateurs, where you will gain constructive feedback when designing menus and presenting dishes for them to assess. As a student you will be proactively involved in College life and in the day to day operations of the College’s Future Chefs restaurant which operates as a realistic working environment for you to demonstrate and hone your developing culinary skills.
During the course you will study a range of subjects both practical and theoretically. To complement these, you will also undertake work experience, participate in national competitions, and enjoy trips and visits to see the industry in operation first hand. You will be assessed by undertaking practical tests, underpinning knowledge questions and theoretical assignments.
You will be constantly supported and guided with assigned individual targets, allowing you to achieve your qualifications and gain a first class experience to assist you in gaining employment in a vibrant sector.
How do I get the qualification?

You should demonstrate genuine passion and motivation for the subject at all levels
Level 1: No formal qualifications are required, but you will need to have an interview and a good reference
Level 2: A minimum of four GCSEs at grade D/3 or above
Level 2 Diploma in Professional Cookery (Preparation and Cooking)
- Three year day release course, term time only
- Employment with a registered establishment is compulsory
- Assistance and guidance will be given to students who do not have current employment at the time of application
A good standard of education is required, preferably students will have four GCSEs at grade D/3 or equivalent. However, the most important criteria for acceptance is genuine enthusiasm, commitment and motivation. Students will be required to attend an interview.
Successful completion of Level 2, as well as competence and motivation at interview, will enable you to either move to the Level 3 qualification or enter employment
Once you have found employment, contact the Apprenticeship Scheme at the College (Tel.01481 737500), who will explain the course enrolment process. You will need to attend College one day per week and you will follow the Level Two Diploma in Professional Cookery qualification, which entails the following:
- completion of specific units, ie, meat, fish, etc.
- keeping a record of your practical work both at College and at your place of work in a diary
- attending practical and theory sessions
- keeping photographic evidence of your work
- field trips
- work experience
- all students will be continually assessed both at College and at your chosen place of work
- you will also be guided and set targets to achieve this qualifications, with full tutorial support at all times

Additional learning support
As part of your learning programme, if you have not yet attained a grade C/4 or equivalent in mathematics and English language, you will be required to study a Functional Skill or GCSE in these subjects.
Students may require additional support for a number of reasons. At the start of your course you will be asked to complete an initial assessment in order for us to identify any additional needs that you may have. During your course, your personal tutor will be able to guide you on how best to access support.
